Which sweeteners do you use?Updated 6 months ago

Maltitol is a sugar substitute containing 75-90% of the sweetness of sugar. It is obtained from maltose (malt sugar), which comes from wheat or maize. This sweetener has almost the same properties as sugar. However, unlike real sugar, this sweetener has no adverse effect on the teeth.

Erythritol is another sugar substitute that contains 60-80% of the sweetness of sugar. It can be obtained from fruit, mushrooms, cheese, wine and soy sauce, among other things. It is the only polyol that has no caloric value. Erythritol is partly absorbed in the large intestine and excreted via the urine.

Sorbitol is a sugar substitute containing 50-60% of the sweetness of sugar. It can be found in fruits. This substance is metabolised slowly in the body, in the same way as glucose, but provides fewer calories (2.4 kcal/g).

Stevia is another sugar substitute containing 200-300% of the sweetness of sugar. Stevia is extracted from the leaves of the stevia plant. The intestinal flora converts steviol glycosides into steviol and this is partly absorbed by the body. The remainder leaves the body via the stool. The steviol absorbed by the body binds to glucuronic acid in the liver and then leaves the body via the urine. Steviol glycosides and steviol contain no calories.
